Courgette Stir Fry

One of those very simple, quick, there's-nothing-in-the-fridge kind of meals. Quantities are for one, cuz stir-frys are best done in single batches.

Serving 1

1 tbls pumpkin seeds
 Light soy sauce
1 tbls vegetable oil
½ onion, chopped
1 cm piece ginger, chopped fine and crushed
½ carrot, in matchsticks
1 courgette, in matchsticks
1 clove garlic, crushed
 Fresh ground black pepper
 dark soy sauce
 sesame oil

Dry fry the pumpkin seeds until blackening and popping. Shake in a little light soy sauce. Sizzle dry. Remove from the heat.

Heat the oil. Fry the onion and ginger. Add carrot, then courgette and garlic. Cook til blackening. Grind in plenty of black pepper. Shake in a little dark soy sauce and sesame oil. Scatter the pumpkin seeds on top to serve.

Good with Dressed Rice Noodles or Rice
