Vegan Salad Recipes
Not wanting to pander to stereotypes, but sometimes vegans do eat salad... It doesn’t have to be just lettuce and tomato, though.
I’ve gathered together my favourite salad recipes, including vegan coleslaw, vegan potato salads, tofu salads and fruity salads. You’ll also find more unusual recipes, like melon and spinach salad, or avocado and grape salad.
I’ve included some nice things to go with all that healthy food, like garlic bread, thick roast chips and olive oil croutons.
These salad recipes can either make a light meal, or serve as a side dish to a richer main meal.

Makes a light summer lunch with some warmed ciabatta bread. - Avocado and grape salad
Very simple, but tasty. - Balsamic Tomato Salad
A really simple but tasty salad, contrasting bitter leaves with sweet balsamic dressing. - Burnt olive croutons
Really smoky, tasty croutons. And very simple. - Fruity Summer Salad
A fresh, light, fruity salad. Good as an accompaniment to a light meal. - Garlic Bread
Essential with soup, pasta or salad. - Hot and Cold Tofu Salad
Stir-fried tofu and carrot on a bed of lettuce. An unusual warm salad, for inbetweeny days. - Japanese Style Salad
This is good light salad, which doesn't need any oil. The seasoned rice vinegar is tasty enough. It goes well with richer, heavier curries or rice dishes. - Melon & Spinach Salad
The sweet melon contrasts really well with the bitter spinach leaves. - new potato & rocket salad
Very simple, quick and tasty, with fresh, vibrant flavours. - New Potato Salad with Olives & Herbs
Warm new potatoes in a light vinaigrette full of fresh parsley and salty black olives. - Potato Medallions with Fresh Herbs
Match zingy fresh herbs with lemon juice as a dressing for crisp roast potatoes. - Potato Salad with Fried Aubergine
Warm potatoes on a bed of lettuce, with crisp fried aubergine slices. - Thick Chips
Really they're just roast potatoes, but cut into chip-shaped wedges so they'll cook quicker. Also, healthier than deep-frying. - Vegan Coleslaw
Vegan Coleslaw made with a garlic tahini dressing. The addition of toasted seeds makes it really healthy, as well as giving a satisfying crunch. - Warm Mushroom & Avocado Salad
A really simple but satisfying, warm salad. Use your favourite mushrooms, or whatever looks freshest in the shops. Excellent with crusty bread, olives and a glass of something red and rustic. - Warm Potato and Pepper Salad
New potatoes with rich, juicy peppers roasted in sherry and sugar.
