Quick Chickpea & Pepper Stew
A spicy, satisfying chickpea stew.
Serving 2
1 small onion, chopped
1 clove garlic, crushed
1 tbls olive oil
1 red pepper, chopped
400g tin tomatoes
400g tin chick peas
½ tsp cumin
½ tsp coriander
½ tsp paprika
1/2½ basil / oregano
freshly ground pepper
Lightly fry the onion and garlic in oil for a few minutes. Add the red pepper. After 5 minutes add the tomatoes, herbs and spices. Simmer for 10-15 minutes. Add the chickpeas and simmer for a further 5 minutes.
