Spicy Autumn Stew
Serving 3-4
1-2 tbls olive oil
4-6 oz new potatoes, whole ir tiny, else halved
2 tsp paprika
pinch of grd chilli
½ onion, roughly chopped
2 small carrots, thickly sliced
1/2 celeriac, in 1cm chunks
4 cloves garlic, crushed
2 tsp grd cumin
2 tbls tomato puree
1.2 tsp dried parsley
plenty of salt & pepper
400 g tin chickpeas
In a large saucepan saute onion in oil for a couple of mins. Add the veg, cook for another minute or two. Add garlic. After another few mins, add the spices and tomato puree. Fry for a couple of mins, then pour in enough water to almost cover.
Bring to the boil, then simmer for 30-40 mins, stirring occasionally, till all veg cooked.
Add chickpeas.
