Quick Pasta with Purple Broccoli
A light, elegant pasta dish, that's also very quick and easy.
Serving 1-2
100g purple sprouting broccoli
2 cloves garlic, sliced
½ red onion, roughly chopped
½ red chilli, chopped
100g cherry tomatoes, halved
3 handfuls fusilli or penne
1 tsp light olive oil or veg oil
1 tsp extra virgin olive oil
Boil or steam the broccoli for five minutes, until just tender. Drain and set aside.
Meanwhile, cook the pasta in plenty of salted, boiling water for 10-12 mins.
Heat the veg oil in a wok. Fry the onion for a couple of mins on a high light. Turn the light down and add chilli and garlic, then tomatoes and broccoli. Keep stirring on as high a light as possible without it burning.
Add a splosh of extra virgin olive oil and a squeeze of lemon juice (if you don't have a lemon, use a slosh of the white wine you're going to drink with it).
Stir in the cooked pasta.
