Melon & Spinach Salad
The sweet melon contrasts really well with the bitter spinach leaves.
Serving per person
¼ red onion, finely sliced
Generous handful of young spinach leaves
3cm wedge of orange-fleshed melon, such as cantaloupe, cut in chunks
olive oil
red wine vinegar
1 clove garlic, chopped fine
dried mint & parsley
salt & pepper
Mix up the dressing (everything except the onion, spinach and melon). Pour it over the onion, spinach and melon. Bob's your uncle.
Good with fresh bread and thick chips
